Out of historical curiosity: what kind of potato? They are from South America and all... did the Japanese use regular ole South American potatoes, or some other indigenous tuber that falls under the fuzzy linguistic category of "potato" (I mean, "sweet potatoes" are no relation, and belong to the same family as morning glories, after all)?
I am totally fascinated by the international migrations of regional vegetables. Perhaps more than the migrations of humans ;)
